Classic Tiramisu in Our Shooter Cups
Ingredients:
- 20–24 ladyfinger biscuits
- 1 cup strong brewed espresso, cooled completely
- 8 oz (225 g) mascarpone cheese, softened
- 1 cup heavy whipping cream, chilled
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 2–3 tbsp unsweetened cocoa powder, for dusting
- 2–3 tbsp dark chocolate shavings, optional, for garnish
Instructions:
- Prepare the Espresso: Brew 1 cup of strong espresso and allow it to cool completely to room temperature. Do not use warm espresso when assembling the tiramisu, as it can make the ladyfingers overly soft.
- Whip the Cream: Pour 1 cup of chilled heavy whipping cream into a large mixing bowl. Using a hand mixer or stand mixer, beat on medium-high speed for about 2–3 minutes, until soft peaks form — the cream should hold its shape briefly when the beaters are lifted but still look smooth and slightly soft. Stop as soon as you reach this point; if the cream starts to look grainy, clumpy, or separated, you've whipped it too long and will need to start over with fresh cream.
- Prepare the Mascarpone Mixture: In a separate bowl, combine 8 oz (225 g) of softened mascarpone cheese, 1/4 cup granulated sugar, and 1 tsp vanilla extract. Beat on low to medium speed for about 1–2 minutes, stopping once to scrape down the sides of the bowl with a spatula, until the mixture is completely smooth with no visible lumps.
- Combine the Cream: Add about 5 tablespoons of the whipped cream (roughly one-third) to the mascarpone mixture. Use a silicone spatula to gently fold it in by cutting down through the center of the mixture, scooping along the bottom, and lifting up and over the top. Rotate the bowl and repeat until incorporated. Add the remaining whipped cream in two more additions of about 5 tablespoons each, repeating the same folding motion after each addition. Avoid vigorous stirring, as this can deflate the whipped cream. The finished mixture should be light, smooth, and airy.
- Prepare the Ladyfingers: Quickly dip each of the 20–24 ladyfinger biscuits into the cooled 1 cup of espresso, coating both sides. Do not leave them in the espresso for more than a second or two, as they can become too soft and difficult to layer.
- Cut the Ladyfingers: Break each ladyfinger into 3–4 pieces, roughly 1 inch long — small enough to sit flat inside the 3 oz Shooter Cups.
- Start Layering: Divide the ladyfinger pieces evenly across all 12 cups for this first layer — roughly 3–4 small pieces per cup. Top with about 1 tablespoon of mascarpone cream per cup, using a spoon or a piping bag fitted with a large round tip (or a zip-top bag with about 1/2 inch snipped off the corner) for a cleaner, more even presentation. Spread the cream into an even layer.
- Repeat the Layers: Add a second layer of ladyfinger pieces, dividing any remaining pieces evenly across the cups, followed by a second layer of mascarpone cream — about 2 tablespoons per cup — finishing level with the rim.
- Add the Topping: Using a fine sieve or small strainer, dust each cup with a light, even coating of unsweetened cocoa powder — just enough to fully cover the surface without clumping. If desired, finish with about 1/4 tsp of dark chocolate shavings per cup for an elegant garnish.
- Chill and Serve: Cover the cups and refrigerate for at least 4 hours, or preferably overnight, to allow the layers to set and the flavors to develop. Serve chilled directly in the 3 oz Shooter Cups.
These tiramisu shooter cups take one of Italy's most beloved desserts and turn it into an easy, individually portioned treat. Whipping the cream to soft peaks and folding it gently into the mascarpone keeps the filling light and airy rather than dense.
