Tasty layered dessert which is perfect for your dinner party. The texture of the lemon meringue mixes really nicely the crispy graham cracker and it's complemented well with the whipped cream and fruit garnish.

ingredients:

  • Lemon meringue mix to make 8 oz
  • 8 oz graham cracker crust
  • 8 oz 35% cooking whipped cream
  • 1 tablespoon sugar
  • 1 lime for garnish
  • 10 blueberries for garnish
  • 10 raspberries for garnish
  • 10 mint leaves for garnish

instructions:

  1. Follow the instructions of the meringue mix to make 8 oz in a small saucepan. Once warm, remove from heat, set aside and allow to thicken.
  2. Pour the cream into a bowl and whisk with a manual or electric whisk until the cream is nice and fluffy. Mix in sugar to sweeten. Set aside.
  3. Break up the graham cracker crust into small pieces.
  4. Layer the ingredients in the cups, starting with the crumbled graham cracker at the bottom, followed by the lemon meringue, finishing with the whipped cream at the top.
  5. Grate some lime zest on the whipped cream for garnish.
  6. Add the blueberry, raspberry and mint leaf to complete the dessert.
